Marinate a whole chicken overnight then let the slow cooker do the work while you’re out enjoying summer. Serve with a salad and Greek Smashed Potatoes.
Ingredients
For the honey orange garlic chicken
- 1 whole chicken
- 6 cloves garlic — crushed
- ¼ cup honey
- ¼ cup orange juice
- ¼ cup soy sauce
- 2 teaspoons cornflour
- 1 tablespoon water
- Orange wedges, to serve
Method
For the honey orange garlic chicken
- To marinate the chicken, whisk together the garlic, honey, juice and soy sauce.
- Transfer the marinade to a snap-lock bag, add the chicken and turn to coat well. Refrigerate overnight.
- Place foil balls in the base of the slow cooker (this stops the chicken going soggy). Place the chicken on top, breast-side down.
- Pour in the marinade and cook on low for 9 hours.
- Transfer the chicken to a serving platter and keep warm while you finish the sauce.
- Transfer the marinade to a saucepan and bring to a simmer. Mix the cornflour and water to make a slurry. Add to the saucepan and simmer, stirring, until slightly thickened.
- To serve, carve the chicken and arrange on a serving platter. Top with the sauce and serve with orange wedges.
