Jam and Oat Crumble Slice

This slice takes only five minutes of hands-on work.


  • 120g butter
  • ½ cup sugar
  • ¼ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • ¾ cup rolled oats
  • A pinch of salt
  • 1 cup jam – any flavour
  • ¼ cup desiccated coconut


  • Preheat oven to 175°C (155°C fan bake).
  • Line a slice tin with baking paper.
  • Melt the butter in a large bowl.
  • Whisk in the sugars and vanilla.
  • Fold in the flour, rolled oats and salt.
  • Set aside a cup of the mixture for the crumble topping, then press the remaining mixture into the prepared tin.
  • Spread the jam over the base.
  • Mix the coconut into the reserved crumble mixture, then sprinkle on top of the jam.
  • Bake for 30–32 minutes or until golden brown.
  • Leave to cool in the tin before cutting into 10 triangles.
