Ingredients
- 120g butter
- ½ cup sugar
- ¼ cup brown sugar
- 1 teaspoon vanilla extract
- 1 cup flour
- ¾ cup rolled oats
- A pinch of salt
- 1 cup jam – any flavour
- ¼ cup desiccated coconut
Method
- Preheat oven to 175°C (155°C fan bake).
- Line a slice tin with baking paper.
- Melt the butter in a large bowl.
- Whisk in the sugars and vanilla.
- Fold in the flour, rolled oats and salt.
- Set aside a cup of the mixture for the crumble topping, then press the remaining mixture into the prepared tin.
- Spread the jam over the base.
- Mix the coconut into the reserved crumble mixture, then sprinkle on top of the jam.
- Bake for 30–32 minutes or until golden brown.
- Leave to cool in the tin before cutting into 10 triangles.
