For the maple-miso dijon salmon

  • 4 fillet pieces skinless, boneless salmon
  • 1⁄4 cup maple syrup
  • 2 tablespoons wholegrain mustard
  • 1 tablespoon dijon mustard
  • 1 tablespoon white miso paste
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons soy sauce
  • 1 clove garlic — crushed


For the maple-miso dijon salmon

  • Preheat the oven to 200°C (180°C fan bake). Line an oven dish with baking paper.
  • Place the salmon in the prepared dish.
  • Combine all the remaining ingredients in a small bowl. Brush over the salmon.
  • Roast for about 10 minutes.
