Ingredients

  • 4 chicken breasts
  • 2 tablespoons cooking oil

Seasoning

  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons onion powder
  • 1 ½ teaspoons garlic salt
  • 1 ½ teaspoons dried Italian herbs
  • ½ teaspoon pepper

For topping

  • ¼ cup basil pesto
  • 2 cups mozzarella – grated
  • ½ cup baby tomatoes – halved
  • ½ cup fresh chopped basil or 1 teaspoon dried basil
  • ¼ cup red onion – diced

Method

  • Beat the chicken breasts between two pieces of baking paper with a rolling pin until they are 1 ½ cm in thickness.
  • Combine all the seasoning ingredients on a plate. Coat both sides of the chicken breasts with the seasoning mixture.
  • Heat the cooking oil in a large, oven proof frying pan, over a medium/high heat.
  • Cook the chicken for 4 minutes each side.
  • Turn your oven grill on.
  • Leaving the chicken in the frying pan, spread the pesto over each chicken breast.
  • Sprinkle over the remaining topping ingredients.
  • Place the frying pan in the oven and grill until golden brown.
