Summer on a plate – simply delicious!
Ingredients
- 4 chicken breasts
- 2 tablespoons cooking oil
Seasoning
- 1 ½ teaspoons garlic powder
- 1 ½ teaspoons onion powder
- 1 ½ teaspoons garlic salt
- 1 ½ teaspoons dried Italian herbs
- ½ teaspoon pepper
For topping
- ¼ cup basil pesto
- 2 cups mozzarella – grated
- ½ cup baby tomatoes – halved
- ½ cup fresh chopped basil or 1 teaspoon dried basil
- ¼ cup red onion – diced
Method
- Beat the chicken breasts between two pieces of baking paper with a rolling pin until they are 1 ½ cm in thickness.
- Combine all the seasoning ingredients on a plate. Coat both sides of the chicken breasts with the seasoning mixture.
- Heat the cooking oil in a large, oven proof frying pan, over a medium/high heat.
- Cook the chicken for 4 minutes each side.
- Turn your oven grill on.
- Leaving the chicken in the frying pan, spread the pesto over each chicken breast.
- Sprinkle over the remaining topping ingredients.
- Place the frying pan in the oven and grill until golden brown.
