Capture the essence of summer in this simple salad. It can be prepped ahead and stored in the fridge for up to a week.

Ingredients

  • 250g small tomatoes – quartered
  • ¼ red onion – thinly sliced
  • 1 clove garlic – crushed
  • ¼ teaspoon garlic salt
  • ¼ cup olive oil
  • 1 tablespoon red wine vinegar
  • Juice of 1 lemon
  • Ground black pepper, to taste
  • Fresh basil leaves, to serve

Method

  • Place the tomatoes, onion, garlic and garlic salt in a bowl or jar.
  • Combine the oil, vinegar, lemon juice and pepper in a small bowl or jug.
  • Pour the oil mixture over the tomato mixture and decorate with basil.
