The spices come together with the lemon, garlic and parsley to create a bright and delectable dish.
Ingredients
- 600g – 700g fish fillets – cut into large pieces
- 2 tablespoons cooking oil
- 5 cloves garlic - crushed
Lemon Sauce
- 1/3 cup lemon juice
- 1/3 cup olive oil
- 30g butter – melted
Coating
- 1/3 cup flour
- 1 teaspoon ground coriander
- ¾ teaspoon smoked paprika
- ¾ teaspoon cumin powder
- ¾ teaspoon garlic salt
- ½ teaspoon freshly ground black pepper
- ¼ cup parsley – chopped for serving
Method
- Heat the oven to 200ºC (180ºC fan bake).
- Combine the lemon sauce ingredients together in a small bowl – set aside.
- Combine the coating ingredients together in a bowl – set aside.
- Heat the cooking oil in an oven proof frying pan over a medium heat.
- Dip each piece of fish into the lemon sauce then into the flour mixture.
- Brown both sides of the fish. Add the garlic to the remaining lemon sauce and drizzle over the fish.
- Place in the oven for 5 minutes. Sprinkle with the chopped parsley for serving.
