Ingredients
For the mexican coleslaw
- 120g coleslaw mix
- ½ red capsicum — finely sliced
- ¼ red onion — finely sliced
- ⅓ cup chopped fresh coriander
For the tequila lime dressing
- ½ cup mayonnaise
- 1 tablespoon tequila
- 1 tablespoon lime juice
- 1 tablespoon sugar
- Salt and ground black pepper, to taste
Method
For the mexican coleslaw
- To make the Tequila Lime Dressing, whisk all the ingredients in a small bowl.
- To make the salad, combine the coleslaw mix, capsicum, onion and coriander in a large bowl.
- Add as much Tequila Lime Dressing as desired and toss to combine.
