Make this to use in Mexican Slow-Cooker Carnitas or have with any Mexican meal. The tequila in the dressing is a game-changer!



For the mexican coleslaw

  • 120g coleslaw mix
  • ½ red capsicum — finely sliced
  • ¼ red onion — finely sliced
  • ⅓ cup chopped fresh coriander

For the tequila lime dressing

  • ½ cup mayonnaise
  • 1 tablespoon tequila
  • 1 tablespoon lime juice
  • 1 tablespoon sugar
  • Salt and ground black pepper, to taste


For the mexican coleslaw

  • To make the Tequila Lime Dressing, whisk all the ingredients in a small bowl.
  • To make the salad, combine the coleslaw mix, capsicum, onion and coriander in a large bowl.
  • Add as much Tequila Lime Dressing as desired and toss to combine.
