A bought packet of taco seasoning is all you need to elevate your sausage rolls for a party or as an addition to a lunch box.

Ingredients

Filling

  • 900g sausage meat
  • 1 onion - finely chopped
  • 1 medium potato – skin on, grated with any excess moisture removed
  • ½ cup tasty cheese – grated
  • 30g packet mild taco seasoning
  • Good pinch paprika
  • Handful parsley – finely chopped

Pastry

  • 350g roll flaky pastry
  • 1 egg – whisked with 1 teaspoon water
  • Freshly ground black pepper
  • Tomato salsa to serve

Method

  • Preheat the oven to 220oC (200oC fan bake). Line two baking trays with baking paper.
  • In a large bowl, combine all the filling ingredients together.
  • Place the pastry on a floured surface. Cut the roll of pastry in half lengthwise. Roll each strip of pastry out slightly.
  • Halve the sausage mixture and place each half lengthwise along each strip of pastry.
  • With a pastry brush, brush the sides of the pastry with the egg mixture.
  • Roll the sausage rolls together with the seam underneath.
  • Brush each long roll with the egg mixture, sprinkle with freshly ground black pepper.
  • Cut the sausage rolls to your desired length and place onto the prepared baking trays.
  • Cut two knife cuts on top of each sausage roll.
  • Cook for 20 – 25 minutes or until golden brown.
  • Serve with a bowl of tomato salsa for dipping.
