- 200g butter
- ¼ cup golden syrup
- 3 tablespoons caster sugar
For the triple chocolate topping
- 100g white chocolate bits
- 100g milk chocolate bits
- 100g dark chocolate bits
Method
For the millionaire’s caramel slice
- Preheat the oven to 190°C (170°C fan bake). Line a 28 x 18cm slice tin with baking paper.
- To make the base, whisk the flour, cornflour, baking soda and salt in a bowl.
- In a separate large bowl, melt the butter then add both sugars and beat until smooth.
- Beat in the egg and vanilla.
- Add the flour mixture and chocolate bits and stir to combine.
- Press into the prepared slice tin and bake for 18–22 minutes until golden. Leave to cool.
- To make the Caramel Filling, combine all the ingredients in a saucepan over a low heat and stir constantly until the sugar has dissolved.
- Increase the heat and boil for 5–7 minutes, stirring constantly so it doesn’t catch. It needs to be a dark golden colour.
- Pour the Caramel Filling over the base and leave to set.
- To make the Triple Chocolate Topping, melt the white, milk and dark chocolate separately in small bowls set over simmering water or in short bursts in a microwave, stirring between bursts.
- Drizzle all three over the caramel to form a swirl pattern.
- Leave to set then cut into pieces.
