Ingredients

For the slice

  • 1½ cups flour
  • 1 tablespoon cornflour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 115g butter
  • ½ cup brown sugar
  • ¼ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 100g white chocolate bits
  • 100g milk chocolate bits
  • 100g dark chocolate bits

For the caramel filling

  • 397g can condensed milk
  • 200g butter
  • ¼ cup golden syrup
  • 3 tablespoons caster sugar

For the triple chocolate topping

  • 100g white chocolate bits
  • 100g milk chocolate bits
  • 100g dark chocolate bits

Method

For the millionaire’s caramel slice

  • Preheat the oven to 190°C (170°C fan bake). Line a 28 x 18cm slice tin with baking paper.
  • To make the base, whisk the flour, cornflour, baking soda and salt in a bowl.
  • In a separate large bowl, melt the butter then add both sugars and beat until smooth.
  • Beat in the egg and vanilla.
  • Add the flour mixture and chocolate bits and stir to combine.
  • Press into the prepared slice tin and bake for 18–22 minutes until golden. Leave to cool.
  • To make the Caramel Filling, combine all the ingredients in a saucepan over a low heat and stir constantly until the sugar has dissolved.
  • Increase the heat and boil for 5–7 minutes, stirring constantly so it doesn’t catch. It needs to be a dark golden colour.
  • Pour the Caramel Filling over the base and leave to set.
  • To make the Triple Chocolate Topping, melt the white, milk and dark chocolate separately in small bowls set over simmering water or in short bursts in a microwave, stirring between bursts.
  • Drizzle all three over the caramel to form a swirl pattern.
  • Leave to set then cut into pieces.
