mint & pea purée

An easy side dish that can be made in advance and reheated when needed. The pea and mint flavours go particularly well with lamb.



For the mint & pea purée

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 onion — diced
  • 2 cups frozen peas — defrosted
  • 2 tablespoons water
  • ½ cup loosely packed chopped fresh mint
  • 3 tablespoons plain yoghurt
  • 2 teaspoons lemon juice
  • Salt and ground black pepper, to taste


For the mint & pea purée

  • Heat the butter and oil in a medium saucepan and sauté the onion until translucent.
  • Add the peas and water and cook for a few minutes.
  • Transfer to a blender, add the mint and blitz to your desired consistency.
  • Stir in the yoghurt and lemon juice and season to taste.
  • Reheat to serve.
