This is a fresh new take on an old classic using the Tangleby house dressing.
Ingredients
Dressing
- ¼ cup olive oil
- 2 tablespoons maple syrup
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic - crushed
- Salt and pepper to taste
Maple Walnuts
- ⅔ cup walnut halves
- 2 tablespoons maple syrup
- ½ teaspoon salt
Salad
- 4 cups baby spinach
- 4 slices red onion
- 1 apple – sliced
- 1 rib celery – diced
Method
Dressing
- Place all of the dressing ingredients into a jar with a lid and shake well – set aside.
Maple Walnuts
- Heat all the ingredients in a small frying pan and cook until the walnuts are nicely caramelized – set aside.
Salad
- Place all the ingredients in a serving bowl or on a platter. Top with the maple walnuts and drizzle with the salad dressing just prior to serving.
