This is a fresh new take on an old classic using the Tangleby house dressing.

Ingredients

Dressing

  • ¼ cup olive oil
  • 2 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic - crushed
  • Salt and pepper to taste

Maple Walnuts

  • ⅔ cup walnut halves
  • 2 tablespoons maple syrup
  • ½ teaspoon salt

Salad

  • 4 cups baby spinach
  • 4 slices red onion
  • 1 apple – sliced
  • 1 rib celery – diced

Method

Dressing

  • Place all of the dressing ingredients into a jar with a lid and shake well – set aside.

Maple Walnuts

  • Heat all the ingredients in a small frying pan and cook until the walnuts are nicely caramelized – set aside.

Salad

  • Place all the ingredients in a serving bowl or on a platter. Top with the maple walnuts and drizzle with the salad dressing just prior to serving.
