No-Churn Mint and Chocolate Chip Ice Cream

It takes only a few minutes to make this show-stopping ice cream. It’s delicious served with my One-Bowl Chocolate Chunk Brownie (see page XXX).


  • 2 cups cream
  • 395g can condensed milk
  • A few drops of peppermint essence
  • A few drops of green food colouring
  • ¾ cup chocolate chips


  • Line a loaf tin with baking paper.
  • Whip the cream until soft peaks form.
  • Fold in the condensed milk.
  • Stir in the peppermint essence and food colouring a few drops at a time until the desired flavour and colour is achieved.
  • Stir in the chocolate chips.
  • Transfer the mixture to the prepared loaf tin and freeze until set.
