No-Churn Mint and Chocolate Chip Ice Cream

It takes only a few minutes to make this show-stopping ice cream. It’s delicious served with my One-Bowl Chocolate Chunk Brownie (see page XXX).

Ingredients
- 2 cups cream
- 395g can condensed milk
- A few drops of peppermint essence
- A few drops of green food colouring
- ¾ cup chocolate chips
Method
- Line a loaf tin with baking paper.
- Whip the cream until soft peaks form.
- Fold in the condensed milk.
- Stir in the peppermint essence and food colouring a few drops at a time until the desired flavour and colour is achieved.
- Stir in the chocolate chips.
- Transfer the mixture to the prepared loaf tin and freeze until set.
