One-Bowl Chocolate Chunk Brownie

This is a chocolate lover’s dream, super fudgy and perfect served warm with ice cream or cream.

Ingredients
- 240g butter
- 2 tablespoons vegetable oil
- 1¼ cups sugar
- 1 cup brown sugar
- 4 eggs – at room temperature
- 1 tablespoon vanilla extract
- 1 cup flour
- 1 cup cocoa powder
- ¾ teaspoon salt
- 200g chocolate – roughly chopped
Method
- Preheat oven to 175°C (155°C fan bake).
- Line a 28 x 18cm slice tin with baking paper.
- Melt the butter in a large bowl. Leave to cool slightly.
- Whisk in the oil and sugars until well combined.
- Whisk in the eggs and vanilla.
- Sift in the flour, cocoa and salt. Gently fold in.
- Fold in three quarters of the chocolate.
- Transfer to the prepared tin and top with the remaining chocolate.
- Bake for 35–40 minutes.
- Leave to cool in the tin then cut into pieces.
