One-Bowl Chocolate Chunk Brownie

This is a chocolate lover’s dream, super fudgy and perfect served warm with ice cream or cream.


  • 240g butter
  • 2 tablespoons vegetable oil
  • 1¼ cups sugar
  • 1 cup brown sugar
  • 4 eggs – at room temperature
  • 1 tablespoon vanilla extract
  • 1 cup flour
  • 1 cup cocoa powder
  • ¾ teaspoon salt
  • 200g chocolate – roughly chopped


  • Preheat oven to 175°C (155°C fan bake).
  • Line a 28 x 18cm slice tin with baking paper.
  • Melt the butter in a large bowl. Leave to cool slightly.
  • Whisk in the oil and sugars until well combined.
  • Whisk in the eggs and vanilla.
  • Sift in the flour, cocoa and salt. Gently fold in.
  • Fold in three quarters of the chocolate.
  • Transfer to the prepared tin and top with the remaining chocolate.
  • Bake for 35–40 minutes.
  • Leave to cool in the tin then cut into pieces.
