One-pan leek and potato bake

Creamy indulgence in a one-pan side dish.



For the one-pan leek and potato bake

  • 2 tablespoons butter
  • 1 large leek — thinly sliced
  • 1 clove garlic — crushed
  • 4 large potatoes — unpeeled and thinly sliced
  • 1¼ cups cream
  • 2 teaspoons finely chopped fresh thyme or rosemary
  • ¼ teaspoon paprika
  • Garlic salt and ground black pepper, to taste
  • ¾ cup grated tasty cheese
  • ¼ cup grated parmesan


For the one-pan leek and potato bake

  • Preheat the oven to 180°C (160°C fan bake).
  • Melt the butter in a large ovenproof non-stick pan. Add the leek and sauté until soft and tender.
  • Add the garlic and cook for 1 minute.
  • Add the potatoes, cream, thyme or rosemary, paprika, garlic salt and pepper. Simmer for 5 minutes.
  • Stir in the cheeses then bake for 45 minutes or until golden and tender.
  • Leave to rest for 5 minutes before serving.
