Creamy indulgence in a one-pan side dish.
Ingredients
For the one-pan leek and potato bake
- 2 tablespoons butter
- 1 large leek — thinly sliced
- 1 clove garlic — crushed
- 4 large potatoes — unpeeled and thinly sliced
- 1¼ cups cream
- 2 teaspoons finely chopped fresh thyme or rosemary
- ¼ teaspoon paprika
- Garlic salt and ground black pepper, to taste
- ¾ cup grated tasty cheese
- ¼ cup grated parmesan
Method
For the one-pan leek and potato bake
- Preheat the oven to 180°C (160°C fan bake).
- Melt the butter in a large ovenproof non-stick pan. Add the leek and sauté until soft and tender.
- Add the garlic and cook for 1 minute.
- Add the potatoes, cream, thyme or rosemary, paprika, garlic salt and pepper. Simmer for 5 minutes.
- Stir in the cheeses then bake for 45 minutes or until golden and tender.
- Leave to rest for 5 minutes before serving.
