One Pan Sausage Hot Pot

This one pan wonder comes together very quickly and makes for a very hearty meal.

Ingredients

  • 1 tablespoon cooking oil
  • 8 pork sausages
  • 6 rashers bacon – chopped
  • 200g Swiss brown mushrooms – halved
  • 330ml cider
  • 2 tablespoons cornflour
  • 1/3 cup caramelised onion relish
  • 1 tablespoon cider vinegar

Method

  • Heat the oil in a large frying pan. Brown the sausages.
  • Add in the bacon and mushrooms. Cook for 3 – 4 minutes.
  • In a medium bowl mix ¼ cup of cider with the cornflour to make a slurry.
  • Add in the remaining cider, relish and vinegar to the bowl.
  • Tip into the frying pan and simmer for 5 minutes.
