Sweet orange and salty hoisin are a classic combination that pairs beautifully with chicken. Serve this full-flavoured dish with rice and Asian vegetables.

Ingredients

  • 1kg skinless, boneless chicken thighs
  • ⅓ cup cornflour
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 3 tablespoons cooking oil
  • 15g butter
  • 3 cloves garlic – crushed

Orange and Hoisin Sauce

  • Finely grated zest of 2 oranges
  • 1 cup orange juice (about 4 oranges)
  • ½ cup hoisin sauce
  • 2 tablespoons grated fresh ginger
  • 2 tablespoons brown sugar
  • A pinch of chilli flakes

Method

  • To make the Orange and Hoisin Sauce, combine all the ingredients in a small bowl.
  • Cut the chicken thighs into quarters.
  • Combine the cornflour, salt and pepper in a shallow bowl. Add the chicken and turn to coat.
  • Heat the oil in a large pan and cook the chicken for 5 minutes each side or until golden brown.
  • Add the butter and garlic and cook for 30 seconds.
  • Add the sauce mixture and simmer for 6 minutes or until the chicken is cooked through.
  • To serve, transfer the chicken to a serving bowl and top with the sauce.
