Sweet orange and salty hoisin are a classic combination that pairs beautifully with chicken. Serve this full-flavoured dish with rice and Asian vegetables.

Ingredients
- 1kg skinless, boneless chicken thighs
- ⅓ cup cornflour
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 3 tablespoons cooking oil
- 15g butter
- 3 cloves garlic – crushed
Orange and Hoisin Sauce
- Finely grated zest of 2 oranges
- 1 cup orange juice (about 4 oranges)
- ½ cup hoisin sauce
- 2 tablespoons grated fresh ginger
- 2 tablespoons brown sugar
- A pinch of chilli flakes
Method
- To make the Orange and Hoisin Sauce, combine all the ingredients in a small bowl.
- Cut the chicken thighs into quarters.
- Combine the cornflour, salt and pepper in a shallow bowl. Add the chicken and turn to coat.
- Heat the oil in a large pan and cook the chicken for 5 minutes each side or until golden brown.
- Add the butter and garlic and cook for 30 seconds.
- Add the sauce mixture and simmer for 6 minutes or until the chicken is cooked through.
- To serve, transfer the chicken to a serving bowl and top with the sauce.
