A wonderfully earthy soup that is very quick to make.

Ingredients

  • 1 tablespoon cooking oil
  • 1 onion – diced
  • 1 carrot – peeled and diced
  • 1 rib celery – diced
  • 2 cloves garlic – crushed
  • 3 cups vegetable or chicken stock
  • 400g can flavoured diced tomatoes
  • ½ cup orzo pasta
  • ¼ teaspoon dried thyme
  • 1⁄8 teaspoon dried oregano
  • 1⁄8 teaspoon dried rosemary
  • 2 cups baby spinach
  • Garlic salt and freshly ground black pepper to taste

Method

  • Heat the oil in a large saucepan. Sauté the onion, carrot and celery for 5 minutes, stirring often.
  • Add in the garlic and cook for 1 minute.
  • Add in the stock, tomatoes, orzo, and dried herbs. Bring the soup to a simmer, stirring occasionally.
  • Simmer for 10 minutes until the pasta is al dente.
  • Stir through the spinach, season and serve.
