A wonderfully earthy soup that is very quick to make.
Ingredients
- 1 tablespoon cooking oil
- 1 onion – diced
- 1 carrot – peeled and diced
- 1 rib celery – diced
- 2 cloves garlic – crushed
- 3 cups vegetable or chicken stock
- 400g can flavoured diced tomatoes
- ½ cup orzo pasta
- ¼ teaspoon dried thyme
- 1⁄8 teaspoon dried oregano
- 1⁄8 teaspoon dried rosemary
- 2 cups baby spinach
- Garlic salt and freshly ground black pepper to taste
Method
- Heat the oil in a large saucepan. Sauté the onion, carrot and celery for 5 minutes, stirring often.
- Add in the garlic and cook for 1 minute.
- Add in the stock, tomatoes, orzo, and dried herbs. Bring the soup to a simmer, stirring occasionally.
- Simmer for 10 minutes until the pasta is al dente.
- Stir through the spinach, season and serve.
