Pan Fried Fish with an Asian Sauce

A wonderful array of Asian flavours to serve with a beautifully cooked 
piece of fish.

Ingredients

Fish

  • 4 x fish fillets
  • ½ cup flour
  • Garlic salt
  • White pepper
  • 2 tablespoons cooking oil

Asian Sauce

  • ¼ cup honey
  • ¼ cup chicken stock
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 2 teaspoons cornflour
  • 2 cloves garlic – crushed
  • ½ tablespoon brown sugar
  • ½ teaspoon ground ginger
  • Fresh coriander chopped spring onion and lime wedges for serving.

Method

  • Combine the flour with a good pinch of garlic salt and pepper. Coat the fish with the mixture.
  • Heat the cooking oil in a large frying pan over a medium heat.
  • Fry the fish until golden on both sides and cooked through.
  • Place all the sauce ingredients into a small saucepan. Whisk well and bring to a simmer for a few minutes or until the sauce has thickened.
  • Place a spoonful of sauce on a plate and top with a cooked fish fillet.
  • Serve sprinkled with fresh coriander, chopped spring onion and a wedge of lime.
