You can use any frozen berries in this vibrant compote — try strawberries, blueberries, blackberries or raspberries or a mixture of your favourites.
Ingredients
For the panna cotta with berry compote
- 1 1⁄2 teaspoons gelatine
- 2 tablespoons cold water
- 500ml cream
- 1⁄4 cup caster sugar
- 1 teaspoon vanilla extract or 1⁄2 vanilla bean — cut lengthwise and seeds scraped out
For the BERRY COMPOTE
- 150g frozen berries
- 2 tablespoons caster sugar
- 1 tablespoon fruit or berry liqueur
Method
For the panna cotta with berry compote
- To make the panna cotta, sprinkle the gelatine over the cold water in a medium bowl. Leave to sit for 10 minutes. Do not stir.
- Combine the cream, sugar and vanilla in a medium saucepan over a medium heat. Bring to a simmer, stirring to dissolve the sugar. Discard the vanilla bean, if using.
- Pour the cream mixture over the gelatine and stir until the gelatine is dissolved.
- Divide between 4 serving glasses and refrigerate for a few hours until set.
- To make the Berry Compote, put the berries and sugar in a saucepan and heat until the sugar is dissolved. Stir in the liqueur and leave to cool.
- Divide the berry compote between the panna cotta glasses and serve chilled.
