Preheat oven to 200° C(180° C fan bake). Line a roasting dish with baking paper.
Combine all the spice blend ingredients together in a small container and shake well. (The extra spice blend can be used to make the recipe another time).
Sprinkle the chicken thighs with the salt.
In a large bowl, add the cooking oil and 2 tablespoons of spice blend. Mix well.
Add the chicken to the bowl and mix well to cover it all.
Place the chicken on the prepared tray and cook for 45 minutes or until the chicken is cooked through.
Serve sprinkled with the chopped parsley.
