Parmesan wedges

These flavoursome, crispy potatoes are extremely moreish and go well with so many dishes.



For the parmesan wedges

  • 6 potatoes — unpeeled
  • ¼ cup olive oil
  • ¼ cup grated parmesan
  • ½ teaspoon Italian herbs
  • ½ teaspoon garlic salt
  • ¼ teaspoon ground black pepper
  • Chopped fresh parsley, thyme or rosemary (optional)


For the parmesan wedges

  • Preheat the oven to 180°C (160°C fan bake). Line a baking tray with baking paper.
  • Cut the potatoes into wedges.
  • Combine all the other ingredients in a large bowl and mix well.
  • Add the potato wedges and toss to coat well.
  • Arrange in a single layer on the prepared tray.
  • Bake for 50–60 minutes or until golden brown.
