These flavoursome, crispy potatoes are extremely moreish and go well with so many dishes.

Ingredients
For the parmesan wedges
- 6 potatoes — unpeeled
- ¼ cup olive oil
- ¼ cup grated parmesan
- ½ teaspoon Italian herbs
- ½ teaspoon garlic salt
- ¼ teaspoon ground black pepper
- Chopped fresh parsley, thyme or rosemary (optional)
Method
For the parmesan wedges
- Preheat the oven to 180°C (160°C fan bake). Line a baking tray with baking paper.
- Cut the potatoes into wedges.
- Combine all the other ingredients in a large bowl and mix well.
- Add the potato wedges and toss to coat well.
- Arrange in a single layer on the prepared tray.
- Bake for 50–60 minutes or until golden brown.
