This creamy side dish is a pasta version of risotto. It’s great with any Italian-style meal.

Ingredients
For the pea & parmesan risoni
- 2 tablespoons butter
- 1 small onion — diced
- 2 cloves garlic — crushed
- 1½ cups risoni or orzo
- 3 cups chicken stock
- ½ teaspoon Italian seasoning
- ¼ teaspoon ground black pepper
- 1½ cups frozen peas — defrosted
- ¾ cup finely grated parmesan
Method
For the pea & parmesan risoni
- Melt the butter in a saucepan over a medium heat. Add the onion and cook until translucent.
- Add the garlic and cook for 1 minute.
- Add the uncooked risoni or orzo, stock, Italian seasoning and pepper.
- Bring to the boil. Reduce the heat, cover and simmer for 10 minutes or until most of the liquid has been absorbed.
- Add the peas and parmesan and stir for 1 minute.
- Remove from the heat and allow to sit for 5 minutes before serving.
