This creamy side dish is a pasta version of risotto. It’s great with any Italian-style meal.

Ingredients

For the pea & parmesan risoni

  • 2 tablespoons butter
  • 1 small onion — diced
  • 2 cloves garlic — crushed
  • 1½ cups risoni or orzo
  • 3 cups chicken stock
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon ground black pepper
  • 1½ cups frozen peas — defrosted
  • ¾ cup finely grated parmesan

Method

For the pea & parmesan risoni

  • Melt the butter in a saucepan over a medium heat. Add the onion and cook until translucent.
  • Add the garlic and cook for 1 minute.
  • Add the uncooked risoni or orzo, stock, Italian seasoning and pepper.
  • Bring to the boil. Reduce the heat, cover and simmer for 10 minutes or until most of the liquid has been absorbed.
  • Add the peas and parmesan and stir for 1 minute.
  • Remove from the heat and allow to sit for 5 minutes before serving.
