These ginger biscuits contain a surprising spicy kick.
Ingredients
- 2 ½ cups flour
- 4 teaspoons ground ginger
- 1 teaspoon baking powder
- ¾ teaspoon mixed spice
- ¼ teaspoon cayenne pepper
- 250g butter - softened
- 1 cup sugar
- 1 egg
- ¼ cup golden syrup
- 2 tablespoons fresh ginger – grated
- 1 teaspoon white vinegar
- ¼ cup raw sugar for topping the biscuits
Method
- Preheat the oven to 180oC (160oC fan bake). Line two baking trays with baking paper.
- Whisk together the flour, ground ginger, baking powder, mixed spice and cayenne pepper – set aside.
- Cream the butter and sugar until light and creamy. Beat in the egg, golden syrup, fresh ginger and vinegar.
- Fold the dry ingredients into the butter mixture, cover and place in the refrigerator for 30 minutes.
- Roll the mixture into balls and dip one side into the raw sugar.
- Place on the prepared baking trays and gently press down with a fork that has been dipped in flour.
- Bake for 15 minutes or until golden brown.
