These ginger biscuits contain a surprising spicy kick.

Ingredients

  • 2 ½ cups flour
  • 4 teaspoons ground ginger
  • 1 teaspoon baking powder
  • ¾ teaspoon mixed spice
  • ¼ teaspoon cayenne pepper
  • 250g butter - softened
  • 1 cup sugar
  • 1 egg
  • ¼ cup golden syrup
  • 2 tablespoons fresh ginger – grated
  • 1 teaspoon white vinegar
  • ¼ cup raw sugar for topping the biscuits

Method

  • Preheat the oven to 180oC (160oC fan bake). Line two baking trays with baking paper.
  • Whisk together the flour, ground ginger, baking powder, mixed spice and cayenne pepper – set aside.
  • Cream the butter and sugar until light and creamy. Beat in the egg, golden syrup, fresh ginger and vinegar.
  • Fold the dry ingredients into the butter mixture, cover and place in the refrigerator for 30 minutes.
  • Roll the mixture into balls and dip one side into the raw sugar.
  • Place on the prepared baking trays and gently press down with a fork that has been dipped in flour.
  • Bake for 15 minutes or until golden brown.
