The pineapple brings a tropical freshness to fried rice.

Ingredients
For the pineapple fried rice
- 2 tablespoons vegetable oil
- 1 onion — finely diced
- 2 cloves garlic — crushed
- ½ red capsicum — diced
- ½ cup frozen peas — defrosted
- 3 cups cooked jasmine rice — cooled
- 1½ tablespoons fish sauce
- 1 tablespoon oyster sauce
- ½ teaspoon sugar
- 425g can pineapple pieces — drained
- Finely sliced spring onion and red chilli, to serve
Method
For the pineapple fried rice
- Heat the oil in a wok or large non-stick pan over a medium heat.
- Add the onion and garlic and cook for 1 minute.
- Add the capsicum and cook for another minute.
- Add the peas and stir for 30 seconds.
- Add the rice, fish sauce, oyster sauce and sugar and cook, stirring constantly, for about 2 minutes or until the rice grains are slightly caramelised.
- Add the pineapple and stir through for about 1 minute.
- Top with the spring onion and chilli to serve.
