Ingredients

For the pineapple fried rice

  • 2 tablespoons vegetable oil
  • 1 onion — finely diced
  • 2 cloves garlic — crushed
  • ½ red capsicum — diced
  • ½ cup frozen peas — defrosted
  • 3 cups cooked jasmine rice — cooled
  • 1½ tablespoons fish sauce
  • 1 tablespoon oyster sauce
  • ½ teaspoon sugar
  • 425g can pineapple pieces — drained
  • Finely sliced spring onion and red chilli, to serve

Method

For the pineapple fried rice

  • Heat the oil in a wok or large non-stick pan over a medium heat.
  • Add the onion and garlic and cook for 1 minute.
  • Add the capsicum and cook for another minute.
  • Add the peas and stir for 30 seconds.
  • Add the rice, fish sauce, oyster sauce and sugar and cook, stirring constantly, for about 2 minutes or until the rice grains are slightly caramelised.
  • Add the pineapple and stir through for about 1 minute.
  • Top with the spring onion and chilli to serve.
