Ingredients
- 500g pork fillet – trimmed and sliced
- ¼ cup cornflour
- ¼ cup apricot jam
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons chilli garlic sauce
- 3 tablespoons cooking oil
- 250g green beans
- 2 spring onions – sliced
- 2 tablespoons sesame seeds – toasted
Method
- To prepare the pork, place the cornflour in a shallow bowl. Add the pork and turn to coat.
- Whisk the jam, soy sauce, sesame oil and chilli garlic sauce in a small bowl.
- Heat the cooking oil in a large pan or wok over a high heat.
- Add the pork and cook for 5–6 minutes, stirring occasionally, until browned and crisp.
- Stir in the beans and continue to cook, stirring often, until al dente.
- Stir in the jam mixture and cook for 30 seconds.
- Stir in the spring onions.
- Serve topped with the sesame seeds.
