Ingredients
- 4 pork chops or cutlets
- Garlic salt and ground black pepper, to taste
- 3 tablespoons cooking oil
- 15g butter
- 1 onion – finely diced
- 200g mushrooms – sliced
- 4 cloves garlic – crushed
- 2 teaspoons dried thyme
- 2 teaspoons dried oregano
- ½ teaspoon smoked paprika
- 2 tablespoons flour
- 1¼ cups chicken stock
- ½ cup cream
Method
- Season the pork with garlic salt and pepper.
- Heat 2 tablespoons of the oil in a large pan over a medium heat.
- Sear the pork on both sides for about 2 minutes each side or until golden brown. Set aside on a plate.

- Add the remaining 1 tablespoon oil and the mushrooms, garlic, thyme, oregano and smoked paprika. Cook, stirring, for 3–4 minutes.
- Stir in the flour and cook for a further minute.
- Add the stock. Stir well, using a wooden spoon to loosen any pan brownings.
- Stir in the cream.
- Return the pork to the pan and simmer for 5 minutes.
