Pork Chops with Mushrooms

An easy one-pan recipe with a hint of smokiness from the paprika.

Ingredients

  • 4 pork chops or cutlets
  • Garlic salt and ground black pepper, to taste
  • 3 tablespoons cooking oil
  • 15g butter
  • 1 onion – finely diced
  • 200g mushrooms – sliced
  • 4 cloves garlic – crushed
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • ½ teaspoon smoked paprika
  • 2 tablespoons flour
  • 1¼ cups chicken stock
  • ½ cup cream

Method

  • Season the pork with garlic salt and pepper.
  • Heat 2 tablespoons of the oil in a large pan over a medium heat.
  • Sear the pork on both sides for about 2 minutes each side or until golden brown. Set aside on a plate.
  • Melt the butter in the same pan. Add the onion and sauté for a few minutes.
  • Add the remaining 1 tablespoon oil and the mushrooms, garlic, thyme, oregano and smoked paprika. Cook, stirring, for 3–4 minutes.
  • Stir in the flour and cook for a further minute.
  • Add the stock. Stir well, using a wooden spoon to loosen any pan brownings.
  • Stir in the cream.
  • Return the pork to the pan and simmer for 5 minutes.
  • Serve the pork with the mushroom sauce.
