  • ¼ cup chicken stock
  • 1½ tablespoons soy sauce
  • 1 tablespoon rice wine or dry sherry
  • 1½ tablespoons sesame oil
  • 1½ teaspoons grated fresh ginger

For the asian dipping sauce

  • ½ cup rice wine vinegar
  • ⅓ cup light soy sauce
  • 3 tablespoons sweet chilli sauce
  • 3 tablespoons sugar
  • 2 tablespoons sesame oil

Method

For the pork dumplings with dipping sauce

  • To make the Asian Dipping Sauce, mix all the ingredients in a small bowl. Sprinkle with the sesame seeds.
  • To make the dumplings, place all the ingredients, except the wrappers and cooking oil, in a large bowl and mix to combine.
  • Working in batches, lay out a few dumpling wrappers and place a teaspoon of mixture into the centre of each. Fold over and seal with your fingers by dipping your fingers into warm water.
  • Heat the oil in a pan or saucepan.
  • When it is very hot, pan-fry or deep-fry the dumplings in batches until golden brown.
  • Serve with the Asian Dipping Sauce.
