Posh Beef Mince with Mushrooms

Caramelising the onions and mushrooms is the key to getting a nice depth of flavour in this easy family meal.

Ingredients
- 500g beef mince
- Salt and ground black pepper, to taste
- 2 tablespoons cooking oil
- 2 red onions – finely diced
- 3 cloves garlic – crushed
- A pinch of dried thyme
- 200g mushrooms – sliced
- 480ml beef stock
- 2 tablespoons tomato paste
- 1 tablespoon wholegrain mustard
- 1 tablespoon balsamic vinegar
- 1 tablespoon cornflour mixed with a little water
Method
- Heat a large pan over a medium-high heat. Add the mince, salt and pepper and cook, breaking up the mince with a wooden spoon, until browned. Transfer to a plate and set aside.
- Add the oil to the pan and cook the onions, garlic and thyme for a few minutes.
- Stir in the mushrooms and a little of the stock. Continue to cook for 4–5 minutes until the mushrooms are caramelised.
- Mix the tomato paste, mustard and vinegar in a medium bowl.
- Whisk in the remaining stock.
- Return the mince to the pan and stir in the stock mixture and the cornflour mixture.
- Simmer for about 20 minutes. Season and serve.
