Posh Beef Mince with Mushrooms

Caramelising the onions and mushrooms is the key to getting a nice depth of flavour in this easy family meal.

Ingredients

  • 500g beef mince
  • Salt and ground black pepper, to taste
  • 2 tablespoons cooking oil
  • 2 red onions – finely diced
  • 3 cloves garlic – crushed
  • A pinch of dried thyme
  • 200g mushrooms – sliced
  • 480ml beef stock
  • 2 tablespoons tomato paste
  • 1 tablespoon wholegrain mustard
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon cornflour mixed with a little water

Method

  • Heat a large pan over a medium-high heat. Add the mince, salt and pepper and cook, breaking up the mince with a wooden spoon, until browned. Transfer to a plate and set aside.
  • Add the oil to the pan and cook the onions, garlic and thyme for a few minutes.
  • Stir in the mushrooms and a little of the stock. Continue to cook for 4–5 minutes until the mushrooms are caramelised.
  • Mix the tomato paste, mustard and vinegar in a medium bowl.
  • Whisk in the remaining stock.
  • Return the mince to the pan and stir in the stock mixture and the cornflour mixture.
  • Simmer for about 20 minutes. Season and serve.
