If you have any Mexican Slow-Cooker Carnitas left over, use it to make these easy pizzas. I’ve left the quantities fluid so you can feed as few or as many people as you like.

Ingredients

For the pulled pork & apricot pizza

  • Pizza bases
  • Barbeque sauce
  • Pizza cheese — grated
  • Leftover pulled pork carnitas
  • Red onion — diced
  • Canned apricots — drained and sliced
  • Sour cream and fresh rosemary sprigs, to serve

Method

For the pulled pork & apricot pizza

  • Preheat the oven to 190°C (170°C fan bake). Line a baking tray with baking paper.
  • Cover the pizza bases with barbeque sauce.
  • Sprinkle with a little pizza cheese.
  • Top with the pork carnitas, red onion and some apricot halves.
  • Sprinkle with more pizza cheese.
  • Bake until golden brown and serve with dollops of sour cream and sprigs of rosemary.
