This makes a great dessert or even breakfast.

Ingredients

  • 1 cup raspberries – fresh or thawed from frozen
  • 1 cup milk
  • 2 tablespoons honey
  • ½ teaspoon vanilla extract
  • ¼ cup chia seeds

Method

  • Blend the raspberries, milk, honey and vanilla extract together until smooth.
  • Transfer to a bowl and add in the chia seeds.
  • Cover and refrigerate for 3 hours or overnight to set.
  • Before serving, remove from the refrigerator and stir well.
  • Transfer to serving bowls or glasses.
