This beautiful salad can still be enjoyed long after summer has waved goodbye.
Ingredients
For the salad
- ½ small red cabbage — finely shredded
- 2 ribs celery — diced
- 2 spring onions — chopped
- 1 red onion — diced
- 1 green capsicum — diced
- 1 cup walnuts — dry roasted
- ¼ cup chopped fresh parsley
For the mustard dressing
- ½ cup olive oil
- 2 tablespoons red wine vinegar
- 2 cloves garlic — crushed
- 2 teaspoons wholegrain mustard
- 2 teaspoons sugar
- Salt and ground black pepper, to taste
Method
For the red cabbage salad
- Place the salad ingredients in a medium serving bowl and toss gently to combine.
- To make the Mustard Dressing, whisk all the ingredients in a small bowl or jug.
- Pour the dressing over the salad and toss to coat.
