Ingredients

For the salad

  • ½ small red cabbage — finely shredded
  • 2 ribs celery — diced
  • 2 spring onions — chopped
  • 1 red onion — diced
  • 1 green capsicum — diced
  • 1 cup walnuts — dry roasted
  • ¼ cup chopped fresh parsley

For the mustard dressing

  • ½ cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic — crushed
  • 2 teaspoons wholegrain mustard
  • 2 teaspoons sugar
  • Salt and ground black pepper, to taste

Method

For the red cabbage salad

  • Place the salad ingredients in a medium serving bowl and toss gently to combine.
  • To make the Mustard Dressing, whisk all the ingredients in a small bowl or jug.
  • Pour the dressing over the salad and toss to coat.
