Rice Bubble Slice

Ingredients

  • 6 cups rice bubbles
  • ¾ cup sugar
  • 180g butter – cubed
  • 3 tablespoons honey

Method

  • Line a 20cm square baking pan with baking paper. Place the rice bubbles into a large bowl.
  • In a heavy bottomed saucepan, combine the sugar, butter and honey.
  • Place over a medium heat and stir with a spatula until the butter is melted and everything comes together.
  • Reduce the heat slightly and continue to cook for 2 ½ minutes, stirring constantly with the spatula.
  • Remove from the heat and pour the mixture over the rice bubbles. Combine well.
  • Tip the mixture into the prepared baking pan and press down with the spatula or a spoon dipped in water.
  • Leave to set for several hours before cutting into squares.
