Ingredients

For the roasted carrots with ginger, honey and orange

  • 6 large carrots — peeled
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1–2cm piece fresh ginger — grated
  • Finely grated zest of ½ an orange

Method

For the roasted carrots with ginger, honey and orange

  • Preheat the oven to 190°C (170°C fan bake). Line a roasting dish with baking paper.
  • Cut the carrots into batons.
  • Combine the oil, honey, ginger and orange zest in a large bowl.
  • Add the carrots and turn to coat.
  • Transfer to the prepared dish and spread out in a single layer.
  • Roast for 40–50 minutes or until soft and starting to brown.
