A touch of warming fresh ginger makes this an ideal winter side dish.
Ingredients

- 6 large carrots — peeled
- 3 tablespoons olive oil
- 1 tablespoon honey
- 1–2cm piece fresh ginger — grated
- Finely grated zest of ½ an orange
Method
For the roasted carrots with ginger, honey and orange
- Preheat the oven to 190°C (170°C fan bake). Line a roasting dish with baking paper.
- Cut the carrots into batons.
- Combine the oil, honey, ginger and orange zest in a large bowl.
- Add the carrots and turn to coat.
- Transfer to the prepared dish and spread out in a single layer.
- Roast for 40–50 minutes or until soft and starting to brown.
