Ingredients
For the roasted honey kūmara
- 800g kūmara — peeled and cut into 2cm pieces
- 2 tablespoons olive oil
- 2 tablespoons honey
- Zest of ½ an orange — finely grated
- ½ teaspoon chilli flakes
- Garlic salt and ground black pepper, to taste
Method
For the roasted honey kūmara
- Preheat the oven to 200°C (180°C fan bake). Line a baking tray with baking paper
- To prepare the kūmara, whisk the oil, honey, orange zest and chilli flakes in a large bowl.
- Add the kūmara and mix to coat well.
- Spread out in a single layer on the prepared tray and season with garlic salt and pepper.
- Bake for 20–30 minutes or until the kūmara is golden brown and slightly caramelised.
