This versatile side dish goes with so many meals.
Ingredients
For the roasted potato cubes
- 800g –1kg potatoes – unpeeled
- Olive oil, for roasting
- ½ teaspoon onion powder
- ½ teaspoon garlic salt
- ½ teaspoon ground black pepper
- Chopped fresh rosemary (optional)
Method
For the roasted potato cubes
- Preheat the oven to 180°C (160°C fan bake). Line a roasting tray with baking paper.
- Cut the potatoes into 1.5cm cubes and place in a large bowl.
- Add a good glug of olive oil and all the remaining ingredients and toss to coat.
- Arrange in a single layer on the prepared tray.
- Roast for 45–60 minutes or until golden brown, tossing halfway through.
