Ingredients

For the roasted potato cubes

  • 800g –1kg potatoes – unpeeled
  • Olive oil, for roasting
  • ½ teaspoon onion powder
  • ½ teaspoon garlic salt
  • ½ teaspoon ground black pepper
  • Chopped fresh rosemary (optional)

Method

For the roasted potato cubes

  • Preheat the oven to 180°C (160°C fan bake). Line a roasting tray with baking paper.
  • Cut the potatoes into 1.5cm cubes and place in a large bowl.
  • Add a good glug of olive oil and all the remaining ingredients and toss to coat.
  • Arrange in a single layer on the prepared tray.
  • Roast for 45–60 minutes or until golden brown, tossing halfway through.
