These infused oils make great gifts and are a fabulous way to bring extra flavour to your meals. It’s important that your rosemary is completely dry. Wet rosemary can quickly lead to bacterial growth.

Ingredients
For the rosemary olive oil
- 2 cups extra virgin olive oil
- 4 sprigs fresh rosemary — washed and completely dried
Method
For the rosemary olive oil
- Warm the oil and rosemary in a saucepan over a very low heat for 5–7 minutes. Cool for 30 minutes.
- Place the rosemary in a bottle then pour in the oil. Seal and refrigerate.
