Ingredients
- 6 skinless, boneless chicken thighs
- ¼ cup mayonnaise
- 2 tablespoons cooking oil
- Chopped parsley, to garnish
Herb Crumb
- 1 cup panko breadcrumbs
- 1 tablespoon finely chopped fresh parsley
- 1 tablespoon paprika
- 2 teaspoons garlic salt
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- ½ teaspoon garlic powder
Method
- Preheat oven to 200°C (180°C fan bake).
- Line a baking tray with baking paper.
- To make the Herb Crumb, combine all the ingredients in a large plastic bag.
- Pat the chicken thighs dry with a paper towel. Coat with the mayonnaise, then add 2 to the crumb and toss to coat. Set aside on a plate while you repeat with the remaining chicken.
- Heat the oil in a large, ovenproof pan over a medium heat. Brown the chicken for about 2 minutes each side.
- Place the pan in the oven and bake for 7–10 minutes or until the chicken is cooked through.
- Serve garnished with parsley.
