Shake and Bake Chicken

Winner, winner! This chicken dinner is sure to become a firm favourite at your house, as it is at ours.


  • 6 skinless, boneless chicken thighs
  • ¼ cup mayonnaise
  • 2 tablespoons cooking oil
  • Chopped parsley, to garnish

Herb Crumb

  • 1 cup panko breadcrumbs
  • 1 tablespoon finely chopped fresh parsley
  • 1 tablespoon paprika
  • 2 teaspoons garlic salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • ½ teaspoon garlic powder


  • Preheat oven to 200°C (180°C fan bake).
  • Line a baking tray with baking paper.
  • To make the Herb Crumb, combine all the ingredients in a large plastic bag.
  • Pat the chicken thighs dry with a paper towel. Coat with the mayonnaise, then add 2 to the crumb and toss to coat. Set aside on a plate while you repeat with the remaining chicken.
  • Heat the oil in a large, ovenproof pan over a medium heat. Brown the chicken for about 2 minutes each side.
  • Place the pan in the oven and bake for 7–10 minutes or until the chicken is cooked through.
  • Serve garnished with parsley.
