These canapé-sized fritters are very easy to whip up. The recipe can also be made into bigger fritters to serve as an entrée for four people.
Ingredients
For the shrimp fritters
- ¾ cup flour
- 1 teaspoon paprika
- ½ teaspoon baking powder
- ¼ teaspoon garlic salt
- ¼ teaspoon black pepper
- A good pinch of cayenne pepper
- 1 egg
- ⅓ cup water
- 300g cooked shrimps
- 2 spring onions – finely chopped
- 2 cloves garlic – crushed
- Cooking oil, for deep-frying
- Sweet chilli sauce, to serve
- Snow pea shoots, to serve (optional)
For the lime mayonnaise
- ⅓ cup mayonnaise
- 2 teaspoons finely grated lime zest
- 2 teaspoons finely grated lime zest
Method
For the shrimp fritters with lime mayonnaise
- To make the Lime Mayonnaise, mix all the ingredients in a small bowl. Set aside.
- To make the fritters, whisk the flour, paprika, baking powder, garlic salt, pepper and cayenne in a large bowl.
- Whisk in the egg and water.
- Stir in the shrimps, spring onions and garlic.
- Heat the oil in a saucepan and, working in batches, deep-fry the mixture in tablespoon lots. Drain on paper towels.
- To serve, place dollops of Lime Mayonnaise on a serving platter and add a drop of sweet chilli sauce in the centre of each dollop.
- Top each with a fritter and garnish with snow pea shoots, if desired.
