Smashed brussels sprouts

Even brussels sprout sceptics will be won over by these cheesy morsels.



For the smashed brussels sprouts

  • 16 brussels sprouts — trimmed
  • 2 tablespoons cooking oil
  • 2 cloves garlic — crushed
  • ½ cup grated mozzarella
  • 1 tablespoon grated parmesan
  • Salt and ground black pepper, to taste


For the smashed brussels sprouts

  • Preheat the oven to 220°C (200°C fan bake). Line a baking tray with baking paper.
  • Boil the brussels sprouts in salted water for about 10 minutes or until bright green and soft.
  • Drain, then transfer to a bowl of iced water for about 3 minutes.
  • Drain again, then place on a clean tea towel to absorb as much moisture as possible.
  • Transfer to the prepared tray and crush each brussels sprout down with the base of a cup.
  • Mix the oil, garlic, mozzarella, parmesan, salt and pepper in a small bowl.
  • Top the brussels sprout evenly with the cheese mixture.
  • Bake for 10–15 minutes or until golden brown.
