Even brussels sprout sceptics will be won over by these cheesy morsels.
Ingredients
For the smashed brussels sprouts
- 16 brussels sprouts — trimmed
- 2 tablespoons cooking oil
- 2 cloves garlic — crushed
- ½ cup grated mozzarella
- 1 tablespoon grated parmesan
- Salt and ground black pepper, to taste
Method
For the smashed brussels sprouts
- Preheat the oven to 220°C (200°C fan bake). Line a baking tray with baking paper.
- Boil the brussels sprouts in salted water for about 10 minutes or until bright green and soft.
- Drain, then transfer to a bowl of iced water for about 3 minutes.
- Drain again, then place on a clean tea towel to absorb as much moisture as possible.
- Transfer to the prepared tray and crush each brussels sprout down with the base of a cup.
- Mix the oil, garlic, mozzarella, parmesan, salt and pepper in a small bowl.
- Top the brussels sprout evenly with the cheese mixture.
- Bake for 10–15 minutes or until golden brown.
