Who doesn’t like beautifully cooked, crispy potatoes?
Ingredients
For the smashed potatoes
- 750g small potatoes — unpeeled
- 1 tablespoon olive oil
- 3 tablespoons butter — melted
- 1⁄2 teaspoon garlic salt
- 1⁄2 teaspoon smoked paprika
- Sea salt and ground black pepper, to taste
- Crispy bacon bits, grated parmesan and fresh herbs, to garnish (optional)
Method
For the smashed potatoes
- Boil the potatoes in salted water until they are fork tender, then drain well.
- Preheat the oven to 200°C (180°C fan bake). Line a baking tray with baking paper and brush with olive oil.
- Place the potatoes on the prepared tray.
- Using the base of a glass, smash the potatoes until they are about 2cm thick.
- Brush or drizzle them evenly with the melted butter.
- Sprinkle with the garlic salt and smoked paprika as well as generous amounts of salt and pepper.
- Bake for 20–30 minutes or until the potatoes are crispy and golden around the edges.
- To serve, sprinkle with bacon, parmesan and herbs, if desired.
