This spiced coffee rub is superb on chicken and equally good sprinkled on pumpkin before roasting.



For the spiced coffee chicken

  • 1 tablespoon medium grind coffee or instant coffee
  • 1 tablespoon smoked paprika
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1½ teaspoons ground cumin
  • 1½ teaspoons brown sugar
  • 1 teaspoon cayenne pepper
  • 1kg skinless, boneless chicken thighs
  • 2 tablespoons butter
  • 2 tablespoons cooking oil
  • Fresh parsley, to garnish (optional)


For the coffee spiced chicken

  • To make the rub, mix all the dry ingredients together in a shallow bowl.
  • Coat the chicken in the rub and set aside for 30 minutes.
  • Heat the butter and oil in a large pan over a medium-low heat.
  • Pan-fry the chicken until it is golden brown and the internal temperature reaches 74°C.
  • Serve garnished with parsley, if desired.
