This spiced coffee rub is superb on chicken and equally good sprinkled on pumpkin before roasting.
Ingredients
For the spiced coffee chicken
- 1 tablespoon medium grind coffee or instant coffee
- 1 tablespoon smoked paprika
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1½ teaspoons ground cumin
- 1½ teaspoons brown sugar
- 1 teaspoon cayenne pepper
- 1kg skinless, boneless chicken thighs
- 2 tablespoons butter
- 2 tablespoons cooking oil
- Fresh parsley, to garnish (optional)
Method
For the coffee spiced chicken
- To make the rub, mix all the dry ingredients together in a shallow bowl.
- Coat the chicken in the rub and set aside for 30 minutes.
- Heat the butter and oil in a large pan over a medium-low heat.
- Pan-fry the chicken until it is golden brown and the internal temperature reaches 74°C.
- Serve garnished with parsley, if desired.
