This is truly an elegant and sophisticated sauce to serve with any type of steak.
Ingredients
- 4 steaks of your choice
- Garlic salt and freshly ground black pepper
- 1 tablespoon cooking oil
Sauce
- 30g butter
- 1/3 cup shallot – finely diced
- ½ cup bourbon
- 1 ½ cups cream
- 1 ½ tablespoons grainy mustard
- 1 teaspoon honey
- 2 tablespoons fresh tarragon or thyme – finely chopped
- Salt and pepper to taste
Method
- Season each steak with garlic salt and pepper. Drizzle with the oil.
- Heat a frying pan over a high heat. Add the steaks and cook to your liking.
- Rest the steaks on a warm plate and cover with foil.
Sauce
- Turn the heat down on the frying pan and add in the butter and chopped shallot. Sauté for 2 minutes.
- Add in the bourbon and reduce by half.
- Add in the cream, mustard and honey. Simmer until the sauce thickens.
- Add in the fresh herbs and any steak resting juices - season.
- Serve the steaks with a good spoonful of the sauce.
