Crunchy, creamy and bright – everything a salad should be.
Ingredients
- 120g baby spinach
- 1 cup strawberries – sliced
- 1 avocado – diced
- 100g crumbled blue cheese
- 1/3 cup sliced almonds – toasted in a dry pan
- ¼ cup red onion – thinly sliced
Dressing
- 1/3 cup olive or avocado oil
- 3 tablespoons red wine vinegar
- 2 tablespoons honey
- 1 tablespoon poppy seeds
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper
Method
- Combine all the salad ingredients together on a platter.
- In a jar with a lid, combine all the dressing ingredients and shake well.
- Pour the dressing over the salad just prior to serving.
