Ingredients

  • 120g baby spinach
  • 1 cup strawberries – sliced
  • 1 avocado – diced
  • 100g crumbled blue cheese
  • 1/3 cup sliced almonds – toasted in a dry pan
  • ¼ cup red onion – thinly sliced

Dressing

  • 1/3 cup olive or avocado oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons honey
  • 1 tablespoon poppy seeds
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper

Method

  • Combine all the salad ingredients together on a platter.
  • In a jar with a lid, combine all the dressing ingredients and shake well.
  • Pour the dressing over the salad just prior to serving.
