Ingredients

Meatballs

  • 550g pork mince
  • 1 cup fresh breadcrumbs
  • ¼ cup milk
  • 1 egg
  • ½ teaspoon garlic salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon pepper
  • 1⁄8 teaspoon chilli flakes

Sweet & Sour Sauce

  • 432g can pineapple pieces in juice – reserve the pineapple pieces
  • ¼ cup light soy sauce
  • ¼ cup water
  • 2 tablespoons soy sauce
  • 2 tablespoons tomato sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons cornflour

Stir Fry

  • 2 tablespoons cooking oil
  • 1 red capsicum – cut into chunks
  • 1 red onion – cut into chunks
  • Pineapple pieces from 432g can
  • Rice for serving

Method

  • Combine all the meatball ingredients together. Roll into balls then refrigerate.
  • In a small bowl, whisk the sauce ingredients together – set aside.
  • In a large frying pan or wok, heat the oil over medium/high heat. Sauté the meatballs until well browned (about 10 minutes) – set aside.
  • Add a little more oil to the wok if needed and sauté the red capsicum and red onion for a few minutes. Add in the pineapple pieces and the sauce. Bring to a simmer.
  • Add the meatballs back into the sauce and simmer for 2 minutes.
  • Serve the meatballs and sauce with rice.
