This recipe brings meatballs to a whole new level of deliciousness.
Ingredients
Meatballs
- 550g pork mince
- 1 cup fresh breadcrumbs
- ¼ cup milk
- 1 egg
- ½ teaspoon garlic salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon pepper
- 1⁄8 teaspoon chilli flakes
Sweet & Sour Sauce
- 432g can pineapple pieces in juice – reserve the pineapple pieces
- ¼ cup light soy sauce
- ¼ cup water
- 2 tablespoons soy sauce
- 2 tablespoons tomato sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons brown sugar
- 2 tablespoons cornflour
Stir Fry
- 2 tablespoons cooking oil
- 1 red capsicum – cut into chunks
- 1 red onion – cut into chunks
- Pineapple pieces from 432g can
- Rice for serving
Method
- Combine all the meatball ingredients together. Roll into balls then refrigerate.
- In a small bowl, whisk the sauce ingredients together – set aside.
- In a large frying pan or wok, heat the oil over medium/high heat. Sauté the meatballs until well browned (about 10 minutes) – set aside.
- Add a little more oil to the wok if needed and sauté the red capsicum and red onion for a few minutes. Add in the pineapple pieces and the sauce. Bring to a simmer.
- Add the meatballs back into the sauce and simmer for 2 minutes.
- Serve the meatballs and sauce with rice.
