Ingredients

  • 50g butter – divided
  • 3 eggs – lightly beaten
  • 1 large carrot – finely diced
  • 1 onion – diced
  • 3 cloves garlic – crushed
  • 4 – 5 cups rice – cooked and chilled
  • 1 cup frozen peas - thawed
  • 2 spring onions – diced
  • ¼ cup soy sauce
  • 3 teaspoons oyster sauce
  • 2 teaspoons sesame oil

Method

  • In a large fry pan or wok heat 15g butter over a medium heat. Pour in the beaten eggs and let them cook for 30 – 40 seconds – set aside.
  • Add the remaining 35g of butter to the same pan. Sauté the carrot and onion until tender. Add in the garlic and cook for 30 seconds.
  • Stir in the rice and peas and cook for 3 – 4 minutes, stirring occasionally.
  • Add in the eggs, spring onions, soy sauce, oyster sauce and sesame oil.
  • Cook for a few more minutes until heated through.
