A quick side dish made in no time at all.
Ingredients
- 50g butter – divided
- 3 eggs – lightly beaten
- 1 large carrot – finely diced
- 1 onion – diced
- 3 cloves garlic – crushed
- 4 – 5 cups rice – cooked and chilled
- 1 cup frozen peas - thawed
- 2 spring onions – diced
- ¼ cup soy sauce
- 3 teaspoons oyster sauce
- 2 teaspoons sesame oil
Method
- In a large fry pan or wok heat 15g butter over a medium heat. Pour in the beaten eggs and let them cook for 30 – 40 seconds – set aside.
- Add the remaining 35g of butter to the same pan. Sauté the carrot and onion until tender. Add in the garlic and cook for 30 seconds.
- Stir in the rice and peas and cook for 3 – 4 minutes, stirring occasionally.
- Add in the eggs, spring onions, soy sauce, oyster sauce and sesame oil.
- Cook for a few more minutes until heated through.
