Simple ingredients combine to make a popular meal. Add some cooked or smoked chicken if you like.
Ingredients
For the three cheese, bacon & spinach pasta
- 500g spaghetti
- 2 teaspoons chicken stock powder
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 onions — diced
- 8 rashers bacon — diced
- 6 cloves garlic — crushed
- 500ml cream
- 2 cups chopped spinach
- 3 cups grated mixed cheeses — parmesan, mozzarella and cheddar
Method
For the three cheese, bacon & spinach pasta
- Cook the pasta in salted water until al dente. Drain, reserving 2 cups of pasta water. Dissolve the stock powder in the reserved pasta water. Set aside.
- While the pasta is cooking, heat the olive oil and butter in a large pan. Sauté the onions and bacon until golden. Add the garlic and stir for 1 minute.
- Add the cream, spinach, cooked spaghetti and reserved pasta water.
- Bring to the boil then immediately add the cheeses and stir until they melt and coat the pasta (about 1 minute).
- Serve immediately.
