three cheese, bacon & spinach pasta

Simple ingredients combine to make a popular meal. Add some cooked or smoked chicken if you like.



For the three cheese, bacon & spinach pasta

  • 500g spaghetti
  • 2 teaspoons chicken stock powder
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 onions — diced
  • 8 rashers bacon — diced
  • 6 cloves garlic — crushed
  • 500ml cream
  • 2 cups chopped spinach
  • 3 cups grated mixed cheeses — parmesan, mozzarella and cheddar


For the three cheese, bacon & spinach pasta

  • Cook the pasta in salted water until al dente. Drain, reserving 2 cups of pasta water. Dissolve the stock powder in the reserved pasta water. Set aside.
  • While the pasta is cooking, heat the olive oil and butter in a large pan. Sauté the onions and bacon until golden. Add the garlic and stir for 1 minute.
  • Add the cream, spinach, cooked spaghetti and reserved pasta water.
  • Bring to the boil then immediately add the cheeses and stir until they melt and coat the pasta (about 1 minute).
  • Serve immediately.
