This savoury take on the classic French cherry clafoutis is basically a crustless vegetarian tart. Lovely for lunch or even a picnic.

Ingredients

  • 1 tablespoon cooking oil
  • 1 onion – diced
  • 1 red capsicum – diced
  • 150g baby spinach
  • 3 eggs
  • 2 tablespoons flour
  • 1 cup milk
  • 1 tablespoon finely chopped fresh dill
  • 1 tablespoon finely chopped fresh parsley
  • ¼ teaspoon garlic salt
  • Ground black pepper
  • 1 cup grated mozzarella
  • ½ cup crumbled feta

Method

  • Preheat oven to 180°C (160°C fan bake).
  • Grease a 20cm square oven dish.
  • Heat the oil in a large pan over a medium heat. Sauté the onion and capsicum for 3–4 minutes.
  • Add the spinach and sauté until starting to wilt.
  • Whisk the eggs and flour in a large bowl. Whisk in the milk, dill, parsley, garlic salt and pepper.
  • Stir in the spinach mixture.
  • Transfer to the prepared dish and sprinkle with mozzarella and feta.
  • Bake for 20–30 minutes or until puffed and golden.
