This savoury take on the classic French cherry clafoutis is basically a crustless vegetarian tart. Lovely for lunch or even a picnic.

Ingredients
- 1 tablespoon cooking oil
- 1 onion – diced
- 1 red capsicum – diced
- 150g baby spinach
- 3 eggs
- 2 tablespoons flour
- 1 cup milk
- 1 tablespoon finely chopped fresh dill
- 1 tablespoon finely chopped fresh parsley
- ¼ teaspoon garlic salt
- Ground black pepper
- 1 cup grated mozzarella
- ½ cup crumbled feta
Method
- Preheat oven to 180°C (160°C fan bake).
- Grease a 20cm square oven dish.
- Heat the oil in a large pan over a medium heat. Sauté the onion and capsicum for 3–4 minutes.
- Add the spinach and sauté until starting to wilt.
- Whisk the eggs and flour in a large bowl. Whisk in the milk, dill, parsley, garlic salt and pepper.
- Stir in the spinach mixture.
- Transfer to the prepared dish and sprinkle with mozzarella and feta.
- Bake for 20–30 minutes or until puffed and golden.
