A vegetable stir fry makes for a great side dish with kebabs or grilled meats. Any combination of vegetables can be used in this recipe.
Ingredients
Sauce
- ½ cup soy sauce
- ¼ cup brown sugar
- 2 tablespoons cornflour
- 1 tablespoon sesame oil
- 4 cloves garlic – crushed
- 2 teaspoons fresh ginger – grated
- Pinch chilli flakes
Stir Fry
- 6 cups vegetables cut to a similar size – broccoli, carrot, capsicums, baby corn, red onion, mushrooms, zucchini
- 2 tablespoons cooking oil
Method
- In a small bowl, whisk all the sauce ingredients together – set aside.
- Heat oil in a large frying pan or wok over a medium heat.
- Stir fry the vegetables for about 5 minutes, or until they are tender.
- Stir in the sauce and simmer for 1 minute.
