This roll makes a lovely after-dinner treat or a thoughtful home-made gift.

Ingredients

For the white chocolate roll

  • 500g white chocolate — chopped
  • 100g dried apricots — chopped into small pieces
  • ¾ cup dried cranberries
  • ½ cup chopped pistachios
  • ½ cup chopped blanched almonds
  • ⅓ cup rice bubbles
  • 2 shortbread fingers — roughly chopped

Method

For the white chocolate roll

  • Melt the white chocolate in a bowl set over a pan of simmering water or in short bursts in a microwave, stirring between bursts.
  • When it is liquid and smooth, stir in all the other ingredients. Leave to cool and thicken.
  • Turn out the mixture onto a sheet of baking paper, form into a cylinder shape and roll up tightly in the baking paper.
  • Refrigerate until set, then cut into slices to serve.
