This roll makes a lovely after-dinner treat or a thoughtful home-made gift.

Ingredients
For the white chocolate roll
- 500g white chocolate — chopped
- 100g dried apricots — chopped into small pieces
- ¾ cup dried cranberries
- ½ cup chopped pistachios
- ½ cup chopped blanched almonds
- ⅓ cup rice bubbles
- 2 shortbread fingers — roughly chopped
Method
For the white chocolate roll
- Melt the white chocolate in a bowl set over a pan of simmering water or in short bursts in a microwave, stirring between bursts.
- When it is liquid and smooth, stir in all the other ingredients. Leave to cool and thicken.
- Turn out the mixture onto a sheet of baking paper, form into a cylinder shape and roll up tightly in the baking paper.
- Refrigerate until set, then cut into slices to serve.
