Avocado & Orange Salad with Tangleby House Dressing
- 4 cups lettuce - roughly chopped
- 2 cups baby spinach
- 1 orange - cut into segments
- 1 avocado - sliced and drizzled with lemon juice
- 1/4 red onion - sliced
Candied Walnuts
- 1/2 cup walnuts
- 1/2 tablespoon maple syrup
- 1/4 teaspoon salt
Tangleby House Dressing
- 1/4 cup olive oil
- 1 clove garlic - crushed
- 2 tablespoons each: maple syrup, apple cider vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Method
Avocado & Orange Salad with Tangleby House Dressing
- Place all the salad ingredients on a serving platter.
- Candied walnuts - in a small frying pan, add in all the ingredients and simmer for 2 minutes - set aside.
- Tangleby House Dressing - whisk all the ingredients together.
- To serve - drizzle the salad with the dressing and sprinkle over the candied walnuts.
